Boston Cheesecake

As my family & I doesn't like to eat cheesecake base which made from digestive biscuits, I've replace it with chocolate sponge cake.

cheesecake with chocolate sponge cake as a base, taste heavenly, the moment you put inside your mouth, it will melt :)

Ingredients for cheesecake base:
250 gr plain sweet biscuits, crushed
¼ tsp ground cinnamon
¼ tsp ground allspice
60 gr butter, melted

Ingredients for cheesecake filling:
500 gr cream cheese
250 gr sour cream
140 gr cater sugar
4 eggs, separated
2 tbs flour
¼ tsp vanilla essence
2 tsp finely grated lemon rind
2 tbs lemon juice

Methods:
(1) Place crushed biscuits, cinnamon, allspice and melted butter in a bowl and mix to combine. Press biscuit mixture over base of a well greased 23 cm springform tin.
(2) For filling: place cream cheese, sour cream, one-third caster sugar, egg yolks, flour, vanilla essence, lemon rind and lemon juice in a large bowl and beat to combine.
(3) Whisk egg white till slightly forthy then gradually spoon in the sugar till finish. Whisk at high speed until forthy adn stiff peak form.
(4) Fold egg white mixture into cheese mixture, spoon into prepared cake tin and bake for 1 hour with oven temperature 180C.
(5) Allow cheesecake to cool in tin, just prior to serving, decorate cheesecake.
(6) To decorate, sift icing sugar over top of cheesecake.

Hi fatmom,

Yes you can omit all spice, most of the time i omit it :)

for sour cream, you may get it from NTUC fair price, but limited brand lor, some time they only carry Bulla brand.

you can get it from Carrefour or Giant, or Jason supermarket.

Hi, can you tell me why is that some recipe of cheesecake required me to put the cake into freezer for at least 3 hours? Then later transfer down to refrigerator. I don't see yours need it. Wonder what is the reason behind it. Thanks.
